With 25 Years of Hospitality Experience, Gaurav Lavania to Head Culinary Operations at ITC Maurya

New Delhi: ITC Hotels has announced the appointment of Gaurav Lavania as Executive Chef at ITC Maurya, its flagship luxury property in the capital. With more than 25 years of experience in the hospitality industry, Chef Lavania will lead the hotel’s culinary operations, overseeing its portfolio of award-winning restaurants as well as large-scale banquet services, further strengthening the property’s reputation for exceptional dining experiences.

A seasoned and passionate culinary professional, Chef Lavania has showcased his expertise across multiple locations nationwide. Known for crafting exquisite flavours from simple ingredients and presenting dishes with minimalist aesthetics while preserving authenticity, he is widely recognised for blending artistry with soulful cooking.

A firm believer in sustainable sourcing and celebrating indigenous culinary traditions, his culinary philosophy reflects a deep connection to India’s rich food heritage, while also embracing contemporary techniques and innovation.

Prior to this appointment, Chef Lavania was part of the leadership team at ITC Narmada. Over the years, he has contributed to several acclaimed restaurants within the ITC Hotels portfolio, including Yi Jing, Dakshin, The Pavilion, Fabelle, and Peshawri, earning accolades for culinary excellence and innovation.
