Boya was inspired by Bhawya Sahu’s deep admiration for Chef Augusto. After years of valuing Chef Augusto’s culinary artistry, Bhawya decided to translate this remarkable talent into a concept designed to transform the dining landscape in Delhi. The name Boya, meaning “sowing the seed,” symbolizes the vision of embodying new beginnings and culinary innovation that the restaurant aims to achieve.

The menu at Boya skillfully combines Japanese and Peruvian flavors, featuring standout dishes such as Filipino Pancit Bihon (rice vermicelli noodles with cabbage, carrot, and haricot beans tossed in dark soy sauce, garlic, and black pepper), Tom Yum (a hot and sour Thai soup with lemongrass, galangal, and kaffir lime), Persea roll (Peruvian avocado, cucumber, green asparagus with a spicy togarashi-tamari soy reduction), and Kokana roll (comprising Otoro, Chutoro, Salmon Belly, Kampachi, Sturgeon Caviar, and gold leaf) all made with premium global ingredients.
